Determination and prediction of the stability of emulsions

Low field NMR methods were developed to predict and follow the stability of emulsions. We developed low field NMR methods (20 MHz) to access to the compartmentalization of water in the emulsion (highly bound / bound / very free water) and to the water binding forces. All these NMR parameters are related to the stability of emulsion.
